Fufu with Chicken Light Soup

    Prepare chicken and vegetables:
  • Wash, cut, and season chicken with ginger, garlic, salt, Gino Peppe & Onion seasoning, and basil leaves.
  • Steam chicken for 10 minutes with tomato, onion, carrot, and green pepper.
  • Remove vegetables and set aside to cool.
  • In a separate pot, put in garden eggs, pepper, and turkey berries.
  • Boil for 5 minutes. Set aside when cooked.
  • Create vegetable mix:
  • Blend whole tomatoes, onion, carrot, and green pepper. Set aside.
  • Blend garden eggs, pepper and turkey berries. Set aside.
  • Prepare soup:
  • Add the tomato mix to the chicken, which should now have stock.
  • Cook for 5 minutes.
  • Add in the garden egg mix and cook together for 30 minutes.
  • Add kpakposhito for flavour.
  • Prepare fufu:
  • Peel and cut cassava and plantain.
  • Boil for 15 minutes.
  • Pound into fufu and mould into preferred sizes.
  • Serve and enjoy:
  • Serve fufu with the hot chicken Light soup, enjoying the rich blend of textures and traditional flavours.
